Favorite Recipes: Black Bean & Quinoa Burgers

These yummy, spicy burgers are a huge family favorite, and we always make extra to have later.  Hope it blesses you as well!  *smile*

* Makes approximately 13 burgers

  • 5 Tbl. Olive oil (for grilling burgers on griddle)
  • 1 Onion, chopped
  • 1 Red pepper, chopped
  • 4 Garlic cloves, pressed or minced
  • 1/2 tsp. Ground cumin
  • 1/4 tsp. Turmeric
  • 2 Tbl. Ketchup
  • 1-1/2 c. Black beans, cooked
  • 1 c. Quinoa, cooked
  • 2 c. Panko bread crumbs (I use Italian Seasoned)
  •  1-1/2 tsp. Sea salt
  • 1/2 tsp. Pepper, freshly ground
  • 1 tsp. Tabasco hot sauce

  1. Saute onions, garlic, and peppers until softened.
  2. Add turmeric, cumin, and ketchup and cook for 1 more minute to release the spices.
  3. In high-powered blender or food processor, blend onion mixture, beans, and quinoa until well blended (but not pureed).
  4. Transfer to bowl and mix in bread crumbs, salt, pepper, and hot sauce.
  5. Heat olive oil to 400 degrees on griddle and drop mixture by 1/4 rounded cup fulls, flattening them on the skillet with fingertips.  Fry until crispy on both sides, about 4 min. per side.  They will have a garden burger texture to them.
  6. Serve on whole-grain bun with lettuce, tomato, pickles, and red onion.
Tip:  Once cooked, patties can be frozen and reheated later.  And they're nice crumbled on top of a green salad!
