Favorite Recipes: Lentil Casserole

Serves 8-10

This is a long time family favorite from my mother, who is an excellent cook and has perfected this recipe.  I call it a “dump and bake” casserole – except for browning the sausage you just dump in all of the ingredients and then bake!  *smile*  It is very simple yet extremely tasty and healthy recipe.  Children love it, too!  And the rice and lentil combination make a complete protein.  ** For a vegetarian modification, see end notes.

6 c. low sodium chicken broth (bullion makes it too salty)
½ c. dry white cooking wine
3/4 c. lentils, uncooked
½ c. brown rice, uncooked
2 tsp. onion powder
1 tsp. Basil
½ tsp. Oregano
½ tsp. Thyme
¼ tsp. Pepper
1 tsp. ground garlic paste
1 pkg. (12 oz.) lite Jimmy Dean sausage, chopped & browned
8 oz. grated mozzarella cheese, divided

In a 2 quart casserole dish combine all ingredients, about 2/3 of the cheese, stir to blend.  Bake at 350 degrees for 2 hrs., stirring once after about 90 min. to break up the lentils a bit. Remove from oven and sprinkle top with remaining cheese.  

Vegetarian modifications:  
  • Use vegetable broth instead of chicken broth
  • Leave out the sausage
  • Add an additional 1/2 cup of dry lentils
  • Add an additional 1/2 cup of dry rice
  • Add an additional 1 tsp. garlic
  • Add 1/2 tsp. salt
  • Add 1 Tbl. Montreal Steak Seasoning
  • Add 1 Tbl. Liquid Smoke
